Stack Up Some Holiday Cheer!

Add some festive flair to your family breakfast with these adorable Christmas Tree Pancakes! Made naturally green with spinach and ornamentally topped with raspberries and sprinkles, they’re as healthy as they are fun. They’re perfect for cooking together with the kiddos, turning holiday mornings into memorable (and delicious) traditions.

  1. In a blender, add spinach, Nellie’s egg, applesauce, buttermilk, sugar, cinnamon, salt, vanilla extract, and 2 tbsp melted butter. Blend until smooth.
  2. In a large mixing bowl, whisk together the flour and baking powder.
    Pour the wet mixture into the dry ingredients. Gently fold the batter until just combined—do not overmix to keep the pancakes light and fluffy. Let the batter rest for 5–10 minutes.
  3. Heat a nonstick pan or griddle over medium heat and melt a small amount of butter. Scoop the batter into the pan to make pancakes of varying sizes (from large to small). Cook until bubbles form on the surface, then flip and cook until golden brown.
  4. Stack the pancakes with the largest at the bottom and the smallest on top to create a tree shape.
  5. Top with sprinkles and raspberries for a festive touch. Serve warm with maple syrup or your favorite toppings.
