Directions
- Preheat oven to 350F.
- Spray a mini muffin pan with cooking spray.
- In a deep bowl, mix all ingredients until well combined.
- Divide the mixture evenly in the mini muffin pan. Make sure you press down to pack it in firmly.
- Bake mini muffins for 15-20 minutes until golden brown and crispy. Nellie's Notes every oven is different. It took about 20 minutes for my quinoa bites to get brown and crispy. Enjoy!
