Whether you're on the road, packing lunchboxes for the day, or hosting a party, it's important to include something yummy and healthy for the kids. And let's face it: quinoa isn't exactly a kid-favorite. But thanks to the cheesy filling and the way these egg bites crisp up in the oven, you might have a new go-to recipe on your hands for any occasion.

Directions

  1. Preheat oven to 350F.
  2. Spray a mini muffin pan with cooking spray.
  3. In a deep bowl, mix all ingredients until well combined.
  4. Divide the mixture evenly in the mini muffin pan. Make sure you press down to pack it in firmly.
  5. Bake mini muffins for 15-20 minutes until golden brown and crispy. Nellie's Notes every oven is different. It took about 20 minutes for my quinoa bites to get brown and crispy. Enjoy!
