If there's one thing to celebrate about warm weather, it's the fact that you can cook and eat an entire meal (with no mess) right in your backyard! These muffin pan eggs take just minutes to cook on your grill, and you can mix and match to your heart's desire. Just tweak the quantities as needed and go to town on all the pancetta, veggie, ham and mushroom, and bacon and cheddar flavor combinations!
Directions
- Preheat grill to 400F.
- Grease muffin pan. Crack an egg in each muffin compartment. If making the scrambled egg pancetta, lightly beat the egg after cracking it into the muffin pan.
- Sprinkle the remaining ingredients for the type of muffin you're making over the top of each egg. You can make all four recipes or just pick your favorite one! Ingredient amounts will depend on how many you make of each muffin type.
- Carefully place entire muffin pan on grill and cook for 6-8 minutes. Check periodically and use a fork or butter knife to remove egg muffins from muffin pan when whites are set and yolks are cooked to your liking. Serve to your family in the backyard for a fun and easy breakfast for dinner!
