It's easy to see why gyeran-ppang (sometimes spelled gyeran bbang) is one of Korea's most beloved street snacks!

Korean egg bread is slightly sweet with a soft, pancake-like texture. Before cooking, an egg is cracked into the center of the batter so that when you bite into the warm finished product, there's a wonderfully soft yolk inside. In this air fryer version of gyeran-ppang, the addition of spinach to the batter and sliced ham on top makes for a fun green eggs and ham twist that kids will adore.

Directions

  1. Blend spinach, yogurt, and one egg in a high-speed blender until smooth.
  2. In a bowl, mix together flour, baking powder, and sugar.
  3. Add blended spinach mixture into the bowl with the flour mixture and gently stir until just combined.
  4. Divide the batter into 6 full-size paper or silicone baking cups. Don't fill more than half of the cup.
  5. Place baking cups into the air fryer basket. Make sure the cups are not touching the inner walls of the basket. Depending on the size of your air fryer, you may need to cook in two batches.
  6. Set the air fryer to 325F and cook for 7 minutes.
  7. After 7 minutes, use a fork to break up the dome of the muffins and flatten out the tops a bit. Sprinkle on chopped ham, then crack an egg into each baking cup. Finish with a sprinkle of mozzarella cheese.
  8. Set the air fryer to 325F and cook for 8 more minutes. If you like runny egg yolks, check doneness around the 7 minute-mark. If you want the eggs thoroughly cooked, cook for additional 1-2 minutes.
