At Nellie's, there’s no clucking around when it comes to the term grass-fed. It means exactly what it sounds like: that our happy herds spend their days munching on fresh green grass, enjoying naps in the shade, and living their best lives in pursuit of churning out some seriously beautiful butter.

No antibiotics or hormones

Like our hens, our cows are never treated with antibiotics or given hormones. Thanks to their airy, uncrowded, clean, and safe living conditions, preventive measures often found on factory farms have no place on our dairy farms—or in your food.

Creamy and delicious

Texture matters—just ask Nellie! Like her creamy, luscious egg yolks, our butter has a thicker, richer texture than most you’ll find at the grocery store. This is all thanks to the slow-churning process, which reduces the amount of air that gets trapped in each stick.

FAQs

  • What does “slow churned” butter mean?

    Slow churning refers to the amount of time it takes to produce the butter from cream. A slower churning process like ours, which takes roughly an hour, yields a butter with a softer, richer, creamier texture and flavor. Butter churned at higher speeds tends to lose those qualities before it’s even packaged

  • Is grass-fed butter also organic? What about GMOs?

    Our butter is not USDA Certified Organic, which means we cannot guarantee that the feed our cows receive is free from GMOs. Our partner dairy farms have the option to treat persistent pest problems on their land with synthetic pesticides, but their pastures are rarely sprayed.

  • Can you store grass-fed butter on the counter?

    For the best results, we always recommend storing high quality butter in the refrigerator. Some folks prefer to leave their butter on the counter, and if you choose to do so, it’s best to keep it covered in a butter dish whenever possible to help prevent oxidation.

  • Can you freeze grass-fed butter?

    Butter can be safely frozen for several months, but should be well wrapped to protect against freezer burn. We recommend keeping it in its original wrapper, then wrapping it tightly with aluminum foil and placing it in an airtight freezer bag or container to keep the flavor and quality intact. Frozen butter can be thawed in the refrigerator and should be used within no more than two weeks once thawed.

  • What color should Nellie’s Free Range butter be?

    All butter gets its color from carotenoids in the grass that the cows consume. As we all remember from science class: carotenoids are naturally occurring yellow, orange, and red plant pigments that cows cannot digest, and ultimately end up in the milk that they produce. In grass-fed butter like ours, the hue always varies with the seasons and the location of the farm, reflecting what types of greens are available to the cows. Throughout the year, you may see a range of beautiful pale yellows to off-white hues in our butter. Have no fear—this is completely normal!

  • Why isn’t your butter Certified Humane?

    Currently, Certified Humane is not quite as common in the butter section as it is in the egg aisle. Our dairy farmers currently use the FARM (Farmers Assuring Responsible Management) Certification, but we are working closely with them to determine whether they can adopt Certified Humane dairy standards in the future.   • Is your butter Kosher?

  • Is your butter gluten-free?

    Although our cows consume grains like barley from time to time, the gluten proteins in our cows' diet do not end up in their milk in the same form, which means that our butter is gluten-free.

  • Is your butter antibiotic-free?

    Yes! All dairy sold in the United States is rigorously tested and must be antibiotic-free in order to adhere to FDA guidelines. While cows are occasionally given antibiotics when they fall ill, strict guidelines dictate how long after treatment the cow’s milk must be disposed of. Milk is also tested for antibiotic residue multiple times throughout its journey from the cow to your table. Thanks to this process, you never have to worry about any antibiotics making their way into our butter.

  • Is your butter packaging recyclable?

    The box that holds our butter is made from recycled paper and can be recycled once again. Waxy butter wrappers like the ones you’ll find on our butter sticks unfortunately cannot be recycled. However, they can be used in a variety of ways, such as for greasing baking pans or for wrapping homemade candies (they should be washed beforehand). The wrappers are also a great resting place for dirty tools while you’re cooking and will make cleaning up a breeze!
