Show your bento box a little love with a Korean-Style rolled omelette sliced into heart-shaped bites! Also known as gyeran-mari, this Korean breakfast dish is filled with flavor and easier to make than it looks. To get the rolled effect, simply pour a thin layer of whisked eggs into your best non-stick pan, add your toppings to one side, roll, add another layer of egg, and repeat! For some California flair, use sliced avocado and cheese in place of the traditional seaweed or swap in your favorite diced veggies for a nutritious snack.

Directions

  1. In a bowl, combine eggs, sesame oil, salt, and water. Whisk well to break up the eggs.
  2. Pass the mixture through a sieve. This step will help create a smoother texture and uniform color (if you don't have a sieve, you can skip this step).
  3. Spray cooking oil on a non-stick pan and heat the pan over medium-low heat. Pour in a portion of the egg mixture until it covers the pan in a thin layer.
  4. When the egg mixture starts to set, place cheese and sliced avocado on one side of the cooking egg mixture.
  5. Carefully roll up the egg mixture into an omelette, starting from the side with the cheese and avocado and rolling towards the opposite side of the pan.
  6. Move the rolled omelette to one side of the pan and pour another thin layer of the egg mixture into the pan's empty side. Once the mixture is set, continue rolling the omelette to incorporate the newly added egg with the roll. Repeat until all of the egg mixture has been added.
  7. Turn off the heat and let the omelette cool for 5 minutes. Move the omelette to a cutting board and slice into 1.5" thick pieces. Cut each piece on a diagonal, then flip one half of each slice over to create a heart shape.
